Ingredienti: 

300 gr di mandorle

300 gr di miele

Spellare le mandorle e tagliarle con un coltello ad una grandezza media (circa la misura di un cucchiaio di riso). Passare al forno le mandorle per asciugarle senza farle cuocere.

Versare in una casseruola il miele, spremere il succo di un limone, poi mettere a calore moderato e fare fondere adagio, mescolando piano con un cucchiaio di legno.

Quando il miele sarà sciolto, porre in una casseruola le mandorle a pezzetti e continuare a mescolare in modo che le mandorle siano amalgamate al miele.

Quando le mandorle e il miele avranno preso colore biondo scuro, togliere il recipiente dal fuoco e versare il composto sul marmo di cucina ben oleato. Con una patata cruda sbucciata infilzata in una forchetta, spianare il preparato all’altezza di 1/2 cm poi, con la lama di un coltello, tracciare delle righe profonde, in modo da dividerlo in rettangoli che verranno staccati quando il croccante sarà freddo.
